pan con tomate

This is a fancy name for tomato toast. The name quite literally translates as “bread with tomato”. It originated in Catalonia, which is a beautiful area in Northern Spain. We haven’t travelled to this part of Spain so this recipe is the closest we’ll come for now. 

This dish came to us when we hosted a dinner party for our fellow food obsessed friends. Our friend Steve inspired this recipe.  

We have an abundance of tomatoes in our home during peak season and this is often a summer lunch item accompanied with a green salad and a glass of crisp white wine. 

INGREDIENTS:

4 large fresh heirloom tomatoes

1 large sourdough boule or baguette, sliced and halved

2 cloves fresh garlic

2 tbl olive oil 

fresh basil leaves 

salt and pepper 

 

DIRECTIONS:

Heat BBQ. Grate tomatoes whole using a box grater into a strainer over a medium size bowl. Brush olive on both sides of bread and grill until slightly crispy. Rub fresh garlic on both sides of bread. Spoon tomato pulp on bread and season with salt and pepper. Tear basil and sprinkle on top of toast. Serve immediately.
